Ingredients
12 bone in, skin on chicken thigh & drumsticks
4 cups buttermilk
Vegetable oil
4 cups plain flour
4 tablespoon garlic powder
2 tablespoon black pepper
2 tablespoon onion powder
4 tablespoon paprika
2 teaspoon cayenne
2 tbsp aromat
2 tablespoon curry
1 tablespoon mixed herbs
Directions :
In a bowl, mix the following; garlic, onion, pepper, paprika, curry, cayenne, aromat, until well combined.
In a separate bowl, combine half of the spice mix with the flour, mix until the spices are well incorporated
Transfer the chicken to a mixing bowl and sprinkle the remaining spice over, until each piece is well coated
Pour the buttermilk over the chicken and stir until the combination of the spice and buttermilk create a light orange color
Marinate the chicken in the fridge for 4 hours or keep overnight
Preheat your veg oil to about 300℉ in a frying pan
Now coat each piece of chicken with the spiced flour, dip them back into the buttermilk, transfer back into spiced flour, shaking off any excess
Now fry for about 10-15 minutes or until you get crispy golden brown
Once cooked, place on your paper towel, plate to remove excess oil
Serve and enjoy.
