Nigerian salad
Ingredients:
Lettuce, cucumber, cabbage
Potatoes, carrots, sweet corn, peas
Tomatoes (4)
Heinz salad cream, baked beans
Tuna or sardine (optional)
Shrimp (optional)
Directions:
Clean and chop your vegetables and set aside
Lettuces, cucumber, cabbage, carrots
- Remove the cucumber skin and slice into cubes
- Remove the potatoes skin and slice into cubes, boil until tender but firm
- Slice your potatoes in circular form
- You can place the boiled diced potatoes in the fridge to add more firmness
- You can also buy frozen chopped vegetable, if you prefer
- Also boil your eggs (4) large eggs & slice using your egg slicer
- Open 2 tins of corn and pour into a bowl
- The next step is to start layering your ingredients to a tray or aluminium foil
- There are no strict rules here, but I start with potatoes, followed by carrots, green peas, lettuce,cabbage, cucumber, sweet corn, peas etc.
- Add your tuna or sardine, baked beans salad cream at intervals
Depending on how colorful you want it you can garnish with the tomatoes and cucumber
Also add your sliced boiled egg on top.
Also garnish with shrimp (optional). When done, cover with foil or clear film and place in the fridge to chill before serving.
