Ingredients:
4 overripe plantain
Salt
palm oil
Crushed chilli
Directions:
Peel and mash or chop your plantain into very small pieces
Transfer to a bowl, add salt, crushed chilli and mix together
Heat up some palm oil in your frying pan on a medium heat for 5 minutes
Bleach the oil as you would for ayamase (designer stew)
Using a spoon, scoop the plantain mix into the hot palm oil
Fry on both slices until you achieve a very dark brown color, once done remove from the heat
Drain out excess oil on your paper towel, once you have drained out the excess oil use clear film to mold it into small balls
Just scoop a small amount on the clear film, tie it at the nape, place it in between your palm and roll for a few seconds to get the desired shape.
Once shaped, sprinkle some crushed chilli on top.
Serve and enjoy.
