Nigerian Cake
Ingredients
4 cups of flour (12 oz cup)
12 large eggs
2 tbsp vanilla extract
2 cups sugar granulated
2 tbsp baking powder
1 cup milk
2 lbs butter (not margarine)
Brandy (optional)
Directions:
1)Add your butter at room temperature and sugar into your mixer and mix well till it becomes soft, creamy and smooth. If you don’t have a mixer, you can mix your butter and sugar in a bowl using a wooden spoon, you will need to use your muscle power
2) next, grease your baking pan with butter and dust it with some flour and set aside
- Break the eggs into a bowl and whisk
- slowly add the whisked eggs to your creamed butter and mix well
- Add your vanilla extract or any flavor of your choice and mix ( ( if adding booze like brandy, this is the time, brandy is used for preservation. There are other alternative cake preservatives like white vinegar or apple cider vinegar.
- Sift in your baking powder and flour to the mix and stir using your spatula
- Add your milk, a little at a time and continue to mix
- Preheat your oven at 325℉
- Put the batter into a baking pan and bake for about 1 hr 45 minutes or until it’s golden
Insert a wooden skewer, in the middle of the cake if it comes out clean, the cake is done
Once done, remove and allow to cool down
Serve and enjoy
You can store the rest in your freezer for up to a month.
Cake keeps well in the freezer.
