Fried plantains/Mosa:
Fried plantains, is a sweet side dish, which is deep fried in oil until it becomes golden brown. Plantain is eaten in different parts of the world. The unripe plantain is green in color and can be boiled or fried to make chunky plantain chips
The yellow plantain is the ripe plantain it can be boiled, and can be deep fried, this is call DODO
Green or unripe plantain are rich in starch, but not sweet, as they age, the starch is converted to sugar. Now the color becomes yellow, the ripe plantain becomes sweet and less starchy, the process of getting ripe converts the starch to sugar.
We also have the over ripe plantains, which are aged plantains, and black in color and mushy to touch the overripe plantain can be used for making mosa this is when we mash over ripe plantain, add plain flour, add nutmeg vanilla extract, yeast, water, mix together allow to rise and deep fry. use your ice cream scoop to add batter to your hot oil and deep fry till it turns golden brown
Serve hot
Ingredients:
Ripe plantain
3 cup veg oil
Salt (optional)
Directions :
Cut off the plantain ends and slice along the middle to remove the skin
Slice out the plantain to your desired shape circular or other wise or diced
Heat up your veg oil on medium high heat
Add your plantain carefully, avoid, splashing any hot oil. Don’t over crowd
Fry on each side for about 5 minutes each or until golden brown
Place on your paper towel lined plate to remove excess oil
Repeat the process for the remaining plantain
Serve and enjoy
Fried plantain is not exclusive to Nigeria or other African countries. It is a common staple in south America and the Caribbean.
