Egg Salad
Ingredients:
10 hard boiled eggs
1 medium red onion, (finely chopped)
3 Tbsp celery (finely chopped)
3 tbsp celery (finely chopped)
3 tbsp Dill (finely chopped)
3 tbsp chives (finely chopped)
For Dressings:
½, cup mayonnaise
2 tsp lemon juice
2 tsp Dijon mustard
1tsp paprika
¼, tsp salt
¼, ground pepper
1 garlic clove minced
Directions:
- Cook, peel and chop your eggs and place in a salad bowl,
- Add finely chopped celery, red onions,dill and chives.
- In a separate bowl,combine all the ingredients for dressing.
- Gently stir dressing into the egg salad until well coated
- Chill and serve
Fun Fact: Egg Salad is very versatile, it can be a side dish and you can also use egg salad in the following ways
Egg Salad Breakfast Sandwich
- Use 2 bread slices or toast 2 bread slices and load egg salad on one side.
- Cover with the second slice of bread for an easy breakfast sandwich.
Tortilla or Pita Egg Salad
- Stuff egg salad in pita bread or flour tortillas, wrap in aluminum foil to keep it from unravelling and pack as lunch.
Avocado Egg Salad
- Load the egg salad onto a halved avocado and enjoy as a side dish.
Lettuce Wrap
Add egg salad to lettuce or Romaine and enjoy as lettuce wrap.
