Banana Bread:
Ingredients:
1½ cup all purpose flour
1 teaspoon baking soda
2 large eggs beaten
½ cup canola oil
1 cup sugar
2 very ripe banana mashed
Confectioners sugar for dusting ( optional)
Directions:
- Preheat the oven to 350℉, butter and flour a 9″ by 5″ inch metal loaf pan.
- In a medium bowl,whisk 1½ cup of flour with the baking soda and salt.
- In another bowl,whisk the eggs with the oil,sugar,and mashed banana.
- Stir the banana mixture into the dry ingredients.
- Scoop the batter into the prepared pan and bake in the center of the oven for about 50 mins until the bread is golden and a toothpick inserted into the center of the loaf comes out clean.
- Transfer the pan to a rack and allow to cool for 15 mins, then turn the bread out onto the rack to cool completely.
- Dust the top with confectioners sugar. (optional)
- Cut into slices and serve.
- Wrap in clear film, it keeps well in the fridge for up to a week.
