Adalu is the name for beans and corn porridge
Ingredients:
Beans (4) cups
Onions
Dry pepper or blended fresh pepper
Palm oil
Crayfish (ground)
Dry fish
Stock cubes, aromat
Corn (2) Cans
Directions/Preparations
Swiftly rinse out your beans under running water, do this quickly to avoid striping off the beans coat
Transfer your cleaned beans into a deep pot and add 4 cups of water, the water should be about an inch or two, above the level of beans, add your onions.
Allow this to cook for 1 hr 30 min or use your pressure cooker to cut down cooking time. Check the beans for softness
- Once the beans is adequately softened
- Add 2 cups of corn or (2) cans of corn
- Reduce your heat to medium low
- Add dried or fresh peppers
- Add 4 cooking spoon of palm oil
- Add the ground crayfish, add seasoning cubes, aromat
Stir until all ingredients are well combined. Continue to cook for another (10 mins) stir again, turn off your heat, allow to cool. Serve and enjoy.
