Chicken curry salad:
Follow the instructions for the chicken salad recipe and reduce the quantity of mayonnaise to only (1) tablespoon or you can completely remove mayonnaise.
The additional ingredients are
- 2 tablespoon curry powder
- 1 tablespoon turmeric powder
- 1 cup raisins (soak in water)
- Olive oil
Directions:
Boil the chicken and cut them into cubes, in a frying pan, add olive oil, onion, raisins, saute for 2 minutes or until they become translucent.
Add turmeric, add curry and continue to cook, stir frequently and make sure your heat is on low to avoid burning.
Add drained raisins and fold it into the mix, remove from the heat, if using mayonnaise add it in at this point, add in your chicken, making sure to coat all the chicken with the turmeric/ curry mix, coat until you have lovely yellow colored chicken
Add in apple and mix, also garnish with spring onion
Chill and serve.
Chicken salad recipe :
Ingredients:
1 lb boneless skinless, chicken breast
1 stalk celery chopped
Red bell pepper, seeded and chopped
1 small chopped red onion
1 whole apple cored and chopped
1 celery lettuce sliced and chopped
Spring onion
Black pepper
Dressing:
6 tablespoon mayonnaise
1 tablespoon plum preserves, like berry, jelly or jam or teaspoon honey
2 teaspoon lemon juice
Salt (optional)
Directions:
Boil the chicken and dice into small cubes, prepare the chicken salad, dressing, in a large bowl. Mix together the mayonnaise, jam, lemon juice, taste for the proper balance of sweetness and acidity. The dressing should not be too sweet or too sour
Add more preservatives or lemon juice until you have reached the balance you want. Add salt and pepper to taste
Mix in the chopped celery, bell pepper, red onion, apple, spring onion
Add the diced chicken, mix with dressing and vegetables, add chopped lettuce to mix and fold it in. Chill and serve!
Serve on toasted or untoasted sandwich bread.
