Chicken Lo mein
Ingredients:
12 oz lo mein noodles
1 lb chicken breast
1 large carrot thinly sliced
1 red pepper sliced
4 garlic cloves minced
1 tablespoon ginger grated
1 green onion chopped
2 tbsp oil for sauteing
2 tbsp unsalted butter for sauteing
Lo mein sauce
⅓, cup honey
1 tbsp sriracha or hot sauce
⅓, cup soy sauce
½, cup chicken broth
1 tbsp cornstarch
Directions:
- In a large pot boil 6 cups of water,add lo mein noodles,add 1 tablespoon oil, 1 tsp salt, cook until tender,drain and set aside.
- Cut the chicken into thin strands,slice the carrot or use pre sliced carrot,slice the peppers.
- In a saucepan, over medium heat,saute chicken with 1 tbsp oil and 1 tbsp butter until chicken is fully cooked. Lightly season with salt and pepper.Remove chicken from pan and set aside.
- In the same pan saute, carrot and pepper with 1 tbsp butter and 1 tbsp oil, until vegetables are tender, add the minced garlic and ginger and cook until fragrant.
- In a bowl,combine all the ingredients for the lo mein sauce.
- Once the vegetables are cooked, add the chicken, green onion and noodles and mix well.
- Pour in the sauce and stir.
- Cook until noodles are reheated.
- Serve and enjoy.

Follow the same instructions, for Lo mein, and substitute Lo mein noodles for linguine pasta or spaghetti.
