Chicken Pot Pie
Ingredients:
- 1 lb chicken breast,cooked & shredded or turkey leftover from thanksgiving.
- 2 cups frozen vegetables
- 1 onion finely chopped
- 4 tbsp unsalted butter
- 3 garlic cloves minced
- 3 tbsp all purpose flour
- 2 cups chicken broth
- ⅔, cup heavy whipping cream
- ½, tsp salt
- ¼, tsp ground black pepper
- ½, tsp italian seasoning.
Directions:
- Prepare the pie dough using this pie recipe or buy store made dough.
- In a saucepan,cook chicken, until fully cooked, season with salt,about 12-15 minutes.
- Once cooked, remove water and shred chicken into pieces and set aside.
- In a pan saute chopped onion with butter .
- Once the onion is tender, add minced garlic and cook until fragrant.
- Whisk in the flour into the pan and mix until well combined.
- Add in the broth, heavy whipping cream and seasoning.cook until the sauce thickens, stirring frequently.
- Stir in the vegetables and chicken and bring to boil,remove and allow to cool completely.
- Roll out the pie dough and place the bottom pie crust onto a pie pan.Add the cooled chicken pot pie mixture into the pie pan.
- Top with the second pie crust,seal,and flute the edges.Add slashes to the center pie.
- Cover the pot pie with foil and bake at 375℉ for 45 – 50 mins.
- Uncover the chicken pot pie and cook for an additional 15 mins
