Chicken Quesadilla
Chicken and stuffed flour tortillas cooked until crispy on the outside and cheesy on the inside.
Ingredients:
2-3 lbs cooked shredded or canned chicken
2oz cream cheese
½,cup ranch dressing
1 cup cheddar or mexican cheese
3 tsp sriracha or red hot sauce (optional)
A pinch of salt, pepper and paprika
4 flour tortillas
Sour cream for dipping (optional)
Avocado (optional)
Directions:
- Combine the chicken,cream cheese,ranch,cheese,sriracha,salt,pepper and paprika.Mix with a fork until well blended.
- Spread some of the chicken mix on one half of the tortilla.
- Bring the other side over and pat down.
- Drizzle oil in a frying pan, heat oil, cook about 2-3 mins per side until the tortillas are crispy and filling is hot, use a pizza cutter to cut into shape.
- Serve and Enjoy.
