Chicken Stir Fry
Ingredients:
1 lb chicken thighs cut into bite size pieces
2 tablespoon oil, 2 tbsp butter
1 small carrot cubed
1 red pepper cubed
4 garlic cloves minced
1 onion cubed
1 tsp fresh ginger minced
Peas, green beans.
Stir fry Sauce Ingredients:
½,cup chicken broth
½ cup water
¼ cup soy sauce
2 tbsp honey
1 tbsp cornstarch
Directions:
- Cut chicken thighs into bite sized pieces. Chop vegetables into cubes.
- Combine all the ingredients for the sauce in a bowl.
- In a large pan on medium heat, heat 1 tbsp oil,once oil is hot, add chicken, cook until browned turning as needed, once cooked remove and set aside.
- Add remaining oil and butter to the pan, add your diced peppers, onions, carrot, vegetables,cook until crisp and tender, stir
- Add chicken back to the pan, add garlic, ginger and cook for 1 min, stirring frequently.
- Add the cashews, then pour the sauce into the pan and bring to boil. Reduce the heat and allow to simmer until sauce thickens and is well incorporated with the remaining ingredients.
- Garnish with green onions (optional)
