Chipotle Burrito Bowl:
This is a copycat version from chipotle mexican grill.
Ingredients:
1 cup rice uncooked or brown rice or Quinoa
1 tsp lime or lemon juice optional
1 tsp chopped cilantro for rice (optional)
1 cup corn
1 lb chicken thighs
1 tbsp oil, Avocado sliced
Romaine lettuce chopped
½,cup tomatoes (finely chopped)
½, cup sour cream
1 tbsp red onion, chopped
½,cup shredded cheese
1 cup beans (optional) ( tinned)
Chicken Seasoning:
½, tsp curry powder
1 tbsp aromat seasoning
½, tsp ground black pepper
½, ground paprika
½,tsp garlic powder
½, tsp salt
1 tbsp veg oil
Directions:
- Cook white rice,drain and drizzle with lime or lemon juice,add chopped cilantro and set aside.
- Combine all the ingredients for chicken seasoning and season the chicken thighs on all sides.
- In a pan, heat 2 tbsp oil, once hot cook the chicken,flipping halfway through,to ensure both sides cook evenly, set aside when done.
- In a pan, saute the corn with 1 tbsp butter,
- In a pan, heat up the beans on low heat for 2mins.
Prepare all desired toppings. Cube the chicken thighs. In a bowl add a side of rice, beans,corn. Or iceberg lettuce.
Add all desired toppings…Avocado,cheese,tomatoes,sour cream….
Chipotle Bowl- Is everything in a burrito served in a bowl without the tortilla…Rice and protein with avocado, beans, tomatoes,sour cream,and cheese.
Chicken Burrito
To make a burrito follow the same process for chipotle bowl, the only additional ingredient is the flour tortilla.
To assemble the burrito you don’t need a bowl you will instead assemble your rice, beans,corn and desired toppings on the flour tortilla wrapped in aluminum foil.

For Beef Burrito – Follow the process for chicken burrito and substitute chicken for thinly sliced beef.
For Fish Burrito: substitute chicken for fish.
