Chocolate Cake
Ingredients
3 cups all purpose flour
2 cups granulated sugar
2 tsp baking soda
1 tsp salt
6 tablespoon unsweetened cocoa powder
2 cups warm coffee
2 tablespoon white vinegar
⅔ cup light olive oil
2 tablespoon vanilla extract
Ingredients for chocolate frosting
12 oz cream cheese (room temp)
1 cup unsalted butter room temp
6 cups powdered sugar
½ tsp salt
2 tsp vanilla extract
1 cup unsweetened cocoa powder
Strawberries and raspberries
Directions
Cake layers
- Preheat oven to 350℉ butter, two 9” cake pan, and line bottoms with a ring of parchment paper
- In a large bowl whisk together the dry ingredients
3 cups flour (sift)
½ cup cocoa powder (sift)
2 cups sugar
2 tablespoon baking soda
1 tsp salt
Whisk until no more lumps except for a few tiny ones
- In a separate bowl, mix together your wet ingredients
2 cups warm coffee
2 tablespoon vinegar
2 tablespoon vanilla
⅔ cup olive oil
- Whisk the wet ingredients into the dry ingredients until they come together (batter will still be slightly lumpy)
Divide equally between prepared cake pans and bake in a preheated oven at 350℉ for 45 minutes or until the toothpick comes out clean.
Allow to cool for 20 minutes and transfer to a wire rack to cool completely before frosting

How to make chocolate frosting
- In the bowl of your electric mixer using paddle attachment or in a large bowl using hand held electric mixer, beat together 12 oz cream cheese with 1 cup butter on medium/ high speed until creamy, scrape down the bowl as needed.
- Sift in 6 cups of powdered sugar with 1 cup cocoa powder, sift in the cocoa powder as well to ensure no lumps.
- Add ½ tsp salt,mix on low speed until well combined,scrape the sides of the bowl as needed and increase speed to medium high and beat until smooth and whipped.
- Add 2 tsp vanilla extract and beat until smooth, the frosting is now ready to be piped on the cooled cake .Decorate with strawberries and raspberries to add some color.
