Chocolate meringue cookies
Ingredients
4 egg whites
¼ tsp cream of tartar
½ tsp vanilla extract
½ cup chocolate chips
Cocoa for dusting
Directions
- Preheat oven to 300 F line your baking pan with parchment paper
- In a large bowl, beat eggs whites and cream of tartar at high speed until soft peaks form about 2-3 minutes
- Without turning off mixer, beat in the sugar and vanilla, beat until stiff peaks form, the mixture will be glossy
- Add cocoa to the mixture and with a wooden spoon gently fold in the cocoa
- Fold in the chocolate chips
- Drop by heaping tablespoon onto baking pan
- Bake for 35-45 minutes or until dry
The cookies are ready when they are hard to touch
Once cookies are baked, turn off the oven and open the door allowing the meringue cookies to cool a bit before removing them to cool temperature.
