Fried Egg
Ingredients:
6 large eggs
2 medium tomatoes
1 onion bulb (sliced)
I tsp curry
I tsp Aromat
1 habanero pepper ( for more spicy add 2)
3 tbsp Veg Oil
1 medium size each of the following …, red, yellow,orange bell peppers
1 tinned geisha or mackerel 15oz (optional)
Directions:
- Slice your peppers and onions, break your egg into a bowl and whisk.On medium heat,warm up some veg oil and add the sliced peppers and onions.
- Add aromat and stir.
- In a separate bowl empty out the tin of mackerel,and mash using a fork,add the mashed mackerel fish to the frying pan,stir until well combined with the peppers.
- Add whisked eggs to the sauce and stir, reduce the heat to low, gently turn to ensure even frying. When ready serve with boiled yam or bread.
