Fried rice
Ingredients:
4 cups of rice
Veg oil
Onions
Green peppers
Green peas
Green beans
Carrots
Curry, thyme, seasoning cubes, aromat
2 rodo habanero jamaica pepper (not spicy, but for a tangy taste)
Green onions,
shrimp or other sea foods of your choice
Diced liver
Method 1
Directions/ preparations
- Rinse and chop all your vegetables or buy chopped frozen, mixed vegs from the store
- In a pot add 4 cups of rice
- Add 5 cups of water and 2 tablespoon of oil
- Allow to boil for 20-25 mins
- Rinse out the rice to get rid of the starch, continue to rinse until your water turns clear, then strain and set aside
Process 2. Fry in a deep frying pan. On low heat, add 4 cooking spoons of oil, add, your diced liver , add seasoning cubes, add aromat, add onions, green peppers, green peas, green beans, curry, thyme, carrots, jamaican peppers and salt to taste
- Stir together with your wooden spoon
- Add the half of the rice from your strainer to this mixture.

Fold in all the ingredients , making sure they are well combined. Continue to steam on low heat for 15 mins or until your fried rice is evenly steamed. Once done, repeat the process(2) for the remaining rice.

Once ready garnish with spring onions for additional color.
Method 2
Directions/ Preparations
- Rinse and chop up all your vegetables or buy pre chopped frozen mixed vegetables from your stove
- In a bowl add 4 cups of rice
- Wash your rice with salt several times and strain
- In a medium sized pot, with low heat on your stove, add 4 cooking spoons of veg oil, add the strained rice.
- With a wooden spoon start stirring your rice until it becomes very chewy and elastic
- Continue string non-stop for 10-15 mins. This process ensures your rice will not be mushy, rather it comes out with each grain standing apart as it should be
- Add your chicken stock, curry, onions, seasoning, cubes, aromat.
Gently fold in all your seasoning using a wooden spoon make sure it evenly distributed
- add1/2 a cup of water, this should be added a little at a time to avoid adding excessive amount of water
The idea here is actually to steam the rice , that’s how we achieve the right consistency.
Continue to cook on low heat for about 15-20 mins , checking your rice at intervals, for softness when satisfied.
Add your carrots , green beans, green peas, cow liver, and fold in using your wooden spoon and continue to steam on low heat for another 10 minis.
-Perform the taste test, once satisfied turn off your stove and remove the lid- Allow to cool completely.
Removing the lid is important for two reasons: 1) when the lid is left on, your rice continues to cook. 2) Fried rice can easily go bad, one way to avoid this is to allow it to cool completely with the lid off.
Serve and enjoy , you can refrigerate left over for up to a week. You can pair your rice with meat or chicken. Other side dishes that go well with fried rice are fried plantains, salad, moimoi, nigerian pancake.
