Melon soup (egusi & Eba)
Ingredients:
Melon seeds/Egusi (ground)
Stock fish
Dry fish
Cow or goat meat
Palm oil
Crayfish
Dry pepper
Onions, ginger, garlic, seasoning cubes.
Directions/ preparations:
Transfer your goat meat from the pot to a bowl and set aside. Add your stock fish in hot water for one hour , blend your crayfish, peppers, ginger, onions and set aside
Wash and season and cook your goat meat until it’s well done.
In a bowl, mix your egusi/ melon seed with water to form a paste and set aside.
With your heat on medium, add (5) cooking spoons palm oil into your deep pot.
When your oil heats up and melts, add your melon mixture, add blended onions, ginger and garlic, seasoning cubes
- Continue to stir at intervals
- Add your meat stock, stock fish, dry fish, meat, crayfish, dry peppers.
- Cover and allow to cook for 25 mins with medium low heat. Stir constantly, add water as needed in small quantities
- Perform the taste, add any additional condiments
- Continue to stir, once ready, turn off your stove and allow to cook.
- Serve and enjoy.
