Ingredients:
4 cups beans
Veg oil
Seasoning cubes, or aromat
Red bell pepper
Eggs boiled (optional)
Fish fillet
Directions :
Add beans into your blender, add some water to cover the beans
Use your blender to roughly grind your beans, this process makes removing the beans coat a lot of easier.
- Pour mixture in a bowl, using your 2 hands rub together, this will cause friction which in turn makes the beans coat to fall off
- Continue to do this briskly for 5-7 minutes
- Add fresh water at intervals to remove the accumulated beans coat
Continue this process until your water becomes clear and you have removed all the beans coat. You can avoid this process by buying processed beans flour, peeling your beans does make moimoi taste much better.
There are a lot of alternatives out there apart from beans flour, you can also buy peeled beans,the only problem with some brand of peeled beans is that even though it is labelled as peeled beans, it does contains the beans coat you will still need to soak and run it through water a few times to get the coat out, but it’s still easier than starting from scratch and it does taste very good like the original method.
-At this point transfer your peeled beans into your blender, add some water, then blend until it forms a thick paste
– add your bell pepper, onions, habanero pepper, continue to blend till you achieve a small paste
– at this point, I usually divide my mixture into 2. The 1st mixing bowl, with a thicker paste will be for akara, while the 2nd mixing bowl will be for moimoi
Akara/beans cake
Akara usually requires less water, using a wooden spoon mix your blended beans until smooth
- Add your diced onions
- Add seasoning, aromat. Continue to mix until all ingredients are well combined
- On your stove, add some veg oil and allow to heat up
- Using a cooking spoon or ice cream scoop, carefully scoop into the hot oil, first it will be shapeless as it fries it turns into small round balls, gently turn the other side to allow for even frying.
Once it’s golden brown, remove, line your plate with paper towel to remove excess oil
Serve and enjoy
Moimoi
Boil & slice (6) eggs and set aside, boil ,season & mash your fish and set aside
Remember we divided our blended beans into 2, this is for moimoi
This 2nd mixing bowl
-Add some warm water, a little at a time
– Add your seasoning cubes, aromat
– Add veg oil
– continue to mix together until well smooth
– Grease your hot cups, aluminum foil…. etc
– On your stove, add water into a big pot, since we are steaming the moimoi, we still add a second layer, a strainer ,section out the mixture half way into your hot greased cups.
– Add your sliced eggs, fish, shrimp etc
– You can alternate what your add in case you have picky eaters
Gently arrange your heat cups into the strainer pot, ensuring you don’t spill the content
-Cover with aluminium foil before adding the lid to make sure the steam is not escaping
-steam for 45 mins
-Use a knife to check if it’s well done
– When the knife comes out clear it’s done
-Allow to simmer & set for 15 – 20 mins.
