Nigerian Chin Chin
Chin chin is a deep fried snack.
Ingredients
2 cups plain flour
1 cup sugar
2 Eggs
1 tin evaporated milk 12 oz
Butter
Nutmeg can be substituted for cinnamon
Salt to taste,
Baking powder
Vanilla essence
Directions:
- In a large bowl,sift in your flour, add your sugar, salt, baking powder, nutmeg,
- Mix until well combined.
- Add your butter in small chunks, add eggs and mix together.
- Add evaporated milk, gradually add water,continue to mix until you get a non sticky dough.
- Allow to rest for 45 mins.
- Sprinkle some flour on a clean surface and roll out your dough. (not too flat or too thick)
- Using a pizza cutter, cut your dough into standard or desired shapes and sizes.
- Sprinkle flour as needed to prevent sticking together.
- In a deep pot,pour veg oil, allow to heat up to medium high,scoop the diced chinchin dough into the hot oil.
- Avoid overcrowding. Overcrowding can cause sogginess.
- Fry until golden brown.
- Stir constantly for good results.
- Scoop out the fried chinchin and transfer into a paper towel lined aluminium pan or tray to remove excess oil.
- Repeat the frying process for the rest of the dough.
- Allow to cool. Enjoy.
- Store in airtight containers.
- Chin chin keeps very well for up to a month.
