Nigerian Pancake
Ingredients
2 cup flour
½ a of cup Sugar (you can scale up and down depending on how sweet you want your pancakes)
½ teaspoon nutmeg
½,teaspoon vanilla essence
1 can evaporated milk 16 oz
Spray oil
¼, cup of water
1 egg
Directions
- Sift your flour in a bowl, add sugar,nutmeg and set aside.
- Mix your wet ingredients together – milk,egg,vanilla essence.
- Pour your wet ingredients over the dry ingredients and mix with a wooden spoon until well incorporated.
- Add water as needed, the mixture should not be too runny or too thick.
- Lightly spray the frying pan,with oil, place the pan on the stove, over medium heat.
- Pour one cooking spoon of batter into the frying pan,and swirl the batter around.
- Gently turn the pancake over using a spatula, allow both sides to cook evenly until a light brown color is achieved.
- Add your favourite toppings….banana, strawberries,blueberries,
- Serve while warm and enjoy.
