Pineapple Chicken Fried Rice
Ingredients:
1 large pineapple Or canned diced pineapple
2 tbsp Veg Oil
10 pieces boneless chicken
2 cup of rice
2 tsp Seasoning cubes or aromat,curry, ½, tsp each garlic,thyme white pepper, curry.
3 mixed bell peppers, diced, chopped spring onions.
Directions:
- Rinse out your rice until your water runs clear,transfer to a medium pot,on medium heat add water, curry,aromat white pepper,veg oil,stir well until well combined and cook for 15mins and set aside.
- Use a sharp knife to slice a pineapple into two, now run your knife through the inside to cut out the flesh, being careful not to cut through the skin,slice up and down and across the pineapple flesh, then scoop out the pineapple cubes and place in a pan.
- Turn on your oven on high,and broil the pineapple cubes on each side for 4-5 mins until slightly charred and set aside.
- Slice your boneless chicken into cubes, heat up some veg oil, on medium heat,add the chicken and season with aromat,garlic,curry,thyme,and fry for about 10-15mins.
- Add the mixed diced peppers & onions,and continue to stir fry for additional 5mins.
- It’s now time to gradually add the cooked rice , stir with a wooden spoon,until well combined.
- Finally stir in the grilled pineapple, allow to simmer, serve & enjoy.
- Remember the empty pineapple halves will serve as our plate, serve in the rice and garnish with the chopped spring onions.
