Puff puff
Ingredients
Plain or self raising flour (2 lbs)
Veg oil for deep frying.
Warm water 1 cup
Yeast (quick action) 2 ¼ teaspoon
Vanilla extract
Salt a pinch
Nutmeg 1 teaspoon
Sugar half a cup (depending on how sweet you want your puff you can add more or reduce the quantity.
2 Egg (optional)
Onions for frying
Baking powder 1 teaspoon (optional)
Directions:
In a deep bowl add your flour, add a pinch of salt, nutmeg, vanilla essence, create a well in the middle and add (2) eggs in a small bowl, do this simple test to make sure your yeast is active, dissolve 2 ¼ teaspoon into ¼ water cup to proof (foam yeast), stir in 1 teaspoon sugar & allow to stand for 10 minutes, it mixture double in volume, yeast is active, the water has to be warm, cold water makes yeast inactive, while hot water kills the yeast.
Gradually add the yeast, add water a little at a time and mix together using a wooden spoon
- You can use a whisk or a hand mixer
- Your mixture should not be too thick or too runny
- Next cover with a clear film, make sure it’s airtight
- Cover it with additional thick towel
- Place in a warm place, like your oven, depending on how warm the place is,
This process can take upward of 3 hours.
When ready, it’s time to start frying it.
In a deep pot,pour in your veg oil,
Slice (2) onion bulbs and add to your oil,this gives your puff puff amazing smell,
Allow the oil and onions to heat up, scoop your batter into the oil using your hand or ice cream scoop. Avoid overcrowding the pot.
Reduce your heat to medium high to allow your puff puff to be evenly fried.
Turn as needed, fry until golden brown.
Once done, transfer your puff puff to a paper towel lined tray or plate to absorb the excess oil.
