Shrimp Jollof rice

Shrimp Jollof rice:

Ingredients

4 cups of rice

Veg oil

Onions, green onions , green peas, green beans, carrots

Red, orange, and yellow bell peppers

Curry, thyme, seasoning cubes, aromat

Habanero peppers (2) (chop into small pieces)

Shrimp, crab meat

 

Directions/ Preparations

  • Rinse and chop all your vegetables or buy are chopped frozen vegetables from the store
  • In a pot add 4 cups of rice
  • Allow to boil for 20-25 min.
  • Rinse out the rice to get rid of the starch, continue to rinse out the rice until your water turns clear then strain and set aside.

In a deep frying pan, on low heat, add 4 cooking spoons of veg oil, add (2) seasoning cubes,  or aromat, add curry (2 teaspoons). Add your chopped red, orange, yellow bell peppers, add chopped habanero peppers, add your mixed chopped vegetables.

Stir together with a wooden spoon, slowly add your cooked strained rice, continue to mix until all the seasoning and all vegetables are well distributed and incorporated.

Still on low heat, once all the ingredients are well blended, cover the pot and allow to steam for additional 10 mins or until your seafood fried rice is evenly steamed .

 

This same method can be used for chicken fried rice, beef fried rice, veg fried rice

Chicken fried rice– substitute the seafood for diced chicken

Beef fried rice– for beef fried rice substitute diced chicken for beef stripes

Veg fried rice– for veg fried rice add all other ingredients except any form of meat,

chicken or seafood.
