Shrimp Rice Bowl
Ingredients:
1 lb raw shrimp
2 tsp cajun seasoning or taco seasoning
1 cup uncooked white rice
1 cup avocado sliced
6 cherry tomatoes halved
1 cup corn fresh or canned
3 tbsp veg oil, butter
Cilantro Lime Dressing
¼, cup mayonnaise
1 garlic clove minced
2tbsp chopped cilantro
2 tbsp sour cream
1tbsp lime juice
Directions:
- Cook white rice.
- In a small bowl, combine all the ingredients for the cilantro sauce.
- Pat dry the shrimp,devein and remove the tail, season the shrimp with taco or cajun seasoning.
- In a pan, heat oil and butter until hot, add shrimp and cook for 2 mins per side or until pink and opaque.
- In another pan, saute corn with 1 tbsp butter.
- Slice the avocado and halve the tomatoes.
- In a bowl,arrange all the ingredients for the shrimp bowl, drizzle with cilantro lime dressing.
- Serve & Enjoy.
