Sponge Cake
4 Ingredients:
6 eggs
1 cup sugar
Sift 1 cup flour
1 tsp baking powder
Directions:
- Preheat the oven to 350℉, line bottom of two 9 inch, cake pan with parchment paper(Do not grease the sides.)
- Add 6 eggs to the bowl of your electric mixer or use a hand held mixer to beat the eggs for 1 minute on high speed.
- With the mixer still on gradually add 1 cup sugar and continue beating for 10mins until thick and fluffy.
- Whisk together your dry ingredients, 1 cup of flour and 1 tsp baking soda, then sift this mixture into fluffy egg mixture,one third at a time.
- Fold in with a spatula,with each addition until incorporated.Fold in gently and stop mixing ,once no streaks of flour remain, don’t over mix so you don’t deflate the batter, this recipe relies on the volume of eggs.
- Divide the batter evenly between prepared cake pan, bake at 350℉ for 25-30mins or until golden brown.
- Remove from the pan by sliding a thin spatula around the edges then transfer to a wire rack and remove parchment baking.
- Allow to cool.
- If needed for cake decoration,you can slice cake to form layers
- Decorate as needed.
